Dried Cherry and Walnut Stuffing recipe

The dried cherries in this recipe create a nice balance of sweet and savory in this recipe. It is also a vegetarian recipe in case you need something to satisfy those harder to please guests. This recipe can be stuffed into a turkey or baked according to the directions below. Serves 6.

Ingredients:

  • 1 loaf stale bread, cut into bite size pieces
  • 1 cup dried cherries, chopped small
  • 1 cup brandy
  • 2 tablespoons butter
  • 1 small onion, chopped small
  • 2 stalks celery
  • 1 cup chopped walnuts
  • 1 cups vegetable or mushroom stock

Directions:

  1. Preheat oven to 350F.

  2. Place the cherries in a small microwave safe bowl. Pour the brandy over and microwave until very hot, about 2 minutes. Set aside.

  3. In a small sauce pot heat the butter over medium high heat until melted. Add the onion and celery and cook until soft and translucent, about 5 minutes.

  4. Add the walnuts and cook them until slightly toasted, about 4 minutes.

  5. Add the cherries, brandy, and vegetable stock. Heat until warm.

  6. Place the bread in a large bowl and pour the warm stock over. Toss with a spoon to combine.

  7. Place into a baking dish and cover with foil. Bake for 30 minutes.

  8. Uncover and bake another 10 minutes or top is lightly browned and crisp.
