Bacon and Cheddar Stuffing recipe

This stuffing is a guaranteed crowd pleaser. This is my secret weapon for taking food to my in-laws house. The crispy bacon and tangy cheddar are a classic combination and even better when combined with tender chunks of bread. Serves 6.

Ingredients:

  • 1 loaf stale bread*, cut into bite size pieces
  • 6 slices bacon, chopped
  • 1 small onion, chopped small
  • 2 stalks celery, chopped small
  • 1 clove garlic, minced
  • 2 cups turkey or chicken stock
  • 1/4 cup chopped fresh parsley
  • 2 cups cheddar cheese, divided

Directions:

  1. Preheat oven to 350F.

  2. Place the bread into a large bowl.

  3. Cook the bacon in a large saute pan over medium heat until very crispy, about 8 minutes.

  4. Add the onion and celery and cook until soft and translucent, about 5 minutes.

  5. Add the garlic and cook until fragrant, about 3 minutes.

  6. Add this to the bread and toss to combine.

  7. Pour the turkey stock over the bread, add the parsley and one cup of cheddar cheese. Toss with a spoon to combine.

  8. Place stuffing in a baking dish and cover with foil. Bake for 30 minutes.

  9. Remove the foil and sprinkle with the remaining one cup of cheese, bake 10 minutes or until cheese is browned and melted.

Any bread can be used, it does not even have to be stale. Although if you are using fresh bread you may need to add less stock. Add it in additions and see how wet the mixture looks. It should look moist not wet.
